Piano can back anything and do duets without rest of band. Although my favorite instrument is a soulful, plantive or smokey saxaphone on ballads. Flutes are impressive too.

Piano gives the "fullest" and most defined accompanyment for me. I'd tack a sax along, if I were allowed two.

I think that the sound of the piano & the various voicings: block chords, inversions are the best. There's nothing quite like a well played piano.
